Shepherd’s Pie 牧羊人肉派


Holland is getting colder and colder, and my fiancé has more desire of some winter oven dishes~ He got a “man aan de kook” recipe book for his birthday this year. So, we chose one weekend and tried this Shepherd’s Pie! Why the name is like this? It is because shepherds need to stay outside all day, so when they come in to eat, they usually want something nice and hot from the oven with lots of potato, fat and meat!! Getting colder in your country? Let’s try it!! 
荷蘭越來越冷了, 未婚夫也越來越想吃一些冬天的料理了~~ 之前他生日的時候, 得到的一本 男人的食譜”!! 我們選了一個週末, 好好的來給它試一下~~ 為什麼這道菜要叫做牧羊人肉派呢? 因為西方的牧羊人,通常都要在外面一整天, 所以回到家時,都會很想要來上很多熱呼呼的馬鈴薯和肉來補充一整天的熱量!! 我想這道菜就是他們最喜歡的其中一道吧!! 台灣冷呼呼又沒暖氣的冬天, 偶爾來上一盤, 也很不錯哦~~


Ingredients for 4 people, 4人份食材:

1 onion, 1個洋蔥
1-2 celery stalks, 1-2隻芹菜莖
500g lamb or beef ground meat, 500g的羊絞肉或牛絞肉
Salt and pepper, 鹽和胡椒 適量
400g tomato chucks sauce, 400g 罐裝番茄塊
1 small concentrated tomato can, 1小罐濃縮番茄
100ml strong beef soup base, 100ml 濃的牛高湯
½ Tea spoon thyme, ½小匙百里香
1 Laurel leaves, 一片月桂葉
1 table spoon chopped parsley, 1大匙香菜末

Top layer, 表層食材:
750g potatoes, 750g 馬鈴薯
1 table spoon mustard powder, 1大匙的芥末粉
50g butter, 50g奶油
100ml mile, 100ml牛奶



Steps 步驟:
1.Cut the onion and celery in to pieces. 把洋蔥和芹菜切成小塊
 Because my fiance doesn't like celery, so I use carrot instead~未婚夫不喜歡芹菜, 所以我用紅蘿蔔代替~
2. Fry the onion, celery, and the ground meat until the meat is not red anymore. Flavored with some salt and pepper. 把洋蔥, 芹菜, 絞肉 下鍋炒至肉變白. 加入適量鹽和胡椒調味

3. Put the tomato chucks from the can, tomato concentrate sauce, beef soup base, thyme, parsley and laurel leaves.加入罐裝番茄塊, 濃縮番茄醬, 牛高湯, 百里香, 月桂葉, 香菜末.

4. Put the lid on and use the low fire to stew it for 30 mins. 蓋上蓋子, 小火燉30分鐘  
5. Cook the potato, peel it and mash it. Add some salt and muster powder, butter, and milk in to the mashed potato. Mix it well. 把馬鈴薯煮熟, 去皮, 搗成泥. 加入適量鹽和胡椒, 芥末粉 和牛奶 拌均勻 
6. Take the laurel leave out and pour the beef stew in to the oven plate. And smear the mashed potato on top of it. Smooth the surface. 把月桂葉從燉好的絞肉中取出, 把絞肉倒進深烤盤中. 把馬鈴薯泥均勻的塗抹在絞肉醬上.  

7. Preheat the oven for 200 ℃, and back it for 30 mins until the mash potato become golden brown color. 放進已經預熱200的烤箱中, 30分鐘, 馬鈴薯泥表層成金黃色.

    * If you have steam cooker at home, you can start with cooking potato.  Cooked or boiled potato skin are easier to be removed! 家裡有電鍋的話, 可以直接先從蒸/煮馬鈴薯開始. 熟的馬鈴薯皮也更容易去除哦!
    * Add cheese on top of the mashed potato is also a good idea!!如果你是重口味的,馬鈴薯泥的上面撒些起司也可以哦~~
